About the job

Based at the Mandarin Oriental Palace, Luzern, within the Culinary department, the Chef de Partie is responsible for assisting the Head Chef and Sous chef to supervise and run all sections at the kitchen they have been assigned to. The Chef de Partie reports to the Head Chef.

As Chef de Partie, you will be responsible for the following duties:
  • Managing a given station in the kitchen and ensuring a smooth workflow in compliance with quality and hygiene standards

  • Ensuring impeccable preparation, quality and attractive presentation of our cuisine in line with our high quality standards

  • Ensuring that food losses are kept to a minimum

  • Creative support in the development of new food concepts

  • Food orders in coordination with the supervisor as well as controlling the daily merchandise receiving

  • Responsible for the daily control of hygiene regulations and cleanliness according to HACCP guidelines

As Chef de Partie, we expect from you:
  • A completed apprenticeship as a cook. 2-3 years of work experience in a similar function - preferably in the upscale hotel/catering industry.

  • Flexibility and ability to work under pressure - your position will include weekend and holiday shifts

  • Eye for detail and creativity - to bring your culinary signature to the table

  • Excellent communication, teamwork and organisational skills

  • Strong leadership skills - to manage your own station

  • High level of commitment as well as a structured, result-oriented and independent work style

  • High quality awareness

  • Very good knowledge of German and English

  • Further foreign language skills are an advantage
