The Pastry Manager at Hellas Bakery & Pita is a skilled culinary professional responsible for producing high-quality pastries, baked goods, and desserts in a high-volume wholesale bakery setting. This role involves hands-on work including baking from scratch, decorating, and assembling a variety of products such as cakes, pastries, breads, and specialty desserts. The Pastry Manager assists with maintaining food and labor budgets within their department and works closely with production management to ensure production goals are met, inventory is well-managed, and product quality remains consistent across all lines.
They contribute to recipe development, maintain high presentation standards, and uphold food safety and sanitation practices.
- Lead and participate in daily pastry production including baking, assembling, and decorating a wide variety of products (cakes, pastries, breads, and desserts).
- Supervise and mentor the pastry team, ensuring efficient operation, quality control, and adherence to recipes and standards.
- Manage production and inventory of ingredients to ensure consistency, proper storage, and minimal waste.
- Produce baked goods from scratch using commercial-scale methods while following established recipes and Hellas standards.
- Plan, develop, and test new recipes to expand and innovate product offerings.
- Source high-quality ingredients and maintain supplier relationships to ensure consistency and quality.
- Ensure all products meet company standards for taste, quality, consistency, and presentation.
- Enforce adherence to safety, sanitation, and Hellas guidelines, as well as internal processes and departmental procedures.
- Maintain a clean, organized, and well-functioning work environment, including oversight of equipment condition and cleanliness.
- Collaborate with Production Manager to meet production targets, manage workflows, and align with business needs.
- Monitor food and labor costs, manage inventory efficiently, and implement waste-reduction strategies.
- Provide training, mentoring, and guidance to pastry team members, fostering a positive and productive team culture.
- Stay current with industry trends, seasonal ingredients, and innovative techniques to continually enhance product offerings.
- Prepare all required paperwork, including forms, reports, and schedules in an organized and timely manner.
- Hold all staff accountable for behaviors and performance.
- Other duties as assigned.
- Strong communication skills, with the ability to clearly and effectively interact with team members across all departments.
- Comprehensive knowledge of all production aspects, cooking techniques, ingredients, equipment, and kitchen processes.
- At least 3 years' experience as a Pastry Chef, or similar role, or a 2-year culinary degree.
- Ability to accurately follow recipes and maintain consistency in execution.
- Advanced knowledge of professional baking and decorating skills.
- Excellent time management and organizational skills.
- Working Manager mindset and ability to lead a team.
- Team-oriented mindset, able to work collaboratively with Production managers and supervisors.
- Ability to thrive and remain composed in a fast-paced environment.
- Flexible availability, including weekends and holidays based on business needs.
- Familiarity with Microsoft Office, Jolt, Hot Schedules, Traceability Programs, and other Production Management platforms.
- Stand and remain active for extended periods (8+ hours) in a fast-paced production environment.
- Lift, carry, push, and pull up to 50 lbs on a frequent basis.
- Fine decorating skills and delicate hand control.
- Bend, squat, stoop, and reach repeatedly throughout the shift.
- Ability to tolerate temperature fluctuations between hot production areas and cooler storage areas.
- Maintain focus in a meticulous, detail-oriented environment.
- Visual requirements include close, peripheral, and focused vision.
