GENERAL DESCRIPTION
Under the direction of the Black Bear Restaurant management at Indian Lodge this position performs routine (journey-level) food preparation work. Cooks food menu items when orders are received. Cleans kitchen, walk-ins and work areas. Studies cooking and kitchen operations to identify areas in need of correction or improvement and makes recommendations for improving operating efficiency. Reports kitchen equipment in need of repair or replacement.
Maintains inventory of food and supplies and prepares requisitions for needed items as appropriate. Completes daily reports. May assist in other areas such as housekeeping, maintenance or groundskeeping. Works under limited supervision, with limited latitude for the use of initiative and independent judgment. Performs additional duties as assigned. Complies with all Agency, Division and Branch rules, regulations and procedures.
Education: Completion of 8th grade.
Experience: Six months of experience in food preparation in a full-service restaurant, cooking for menu preparation and groups.
Licensure: Must possess or be able to obtain, within 30 days of employment, a valid state driver’s license.
Must have or be able to obtain within thirty days of employment a valid Food Handler Certification recognized by the Texas Department of State Health Services.
PREFERRED QUALIFICATIONSEducation: Graduation from High School or GED.
Experience: One year of experience in food preparation in a full-service restaurant, cooking for menu preparation and groups.
Licensure: A valid Food Handler Certification recognized by the Texas Department of State Health Services.
KNOWLEDGE,SKILLS AND ABILITIES
- Knowledge of restaurant operation including quantity food preparation techniques and procedures.
- Knowledge of ordering inventory of grocery supplies.
- Knowledge of health and safety regulations, proper food temperatures and safe food handling techniques.
- Knowledge of cooking and baking.
- Knowledge of basic mathematics.
- Skill in using MS Word, Excel and Outlook.
- Skill in effective verbal and written communication.
- Skill in use and care of food preparation appliances and equipment.
- Skill in providing quality customer service in a courteous and professional manner.
- Skill in establishing and maintaining effective work relationships with co-workers and work-related contacts.
- Skill in training others.
- Ability to analyze problems and recommend solutions.
- Ability to interpret and follow recipes.
- Ability to accurately follow instructions.
- Ability to work independently with little or no supervision.
- Ability to work as a member of a team.
- Ability to perform manual labor including lifting supplies and materials up to 30 lbs.
- Ability to conduct work activities in accordance with TPWD safety program.
- Required to work in a public hotel-type facility.
- Required to work 40 hours per week with varying schedules, including hours other than 8:00 a.m. to 5:00 p.m. and days off other than Saturdays, Sundays and holidays; potential for split shifts.
- Required to adjust to changing schedules.
- May be required to operate a State vehicle.
- Required to travel 5% with possible overnight stays.
- Must conform to TPWD dress and grooming standards, work rules, and safety procedures.
