As a Dumpling Prep / Trainee, you are part of the heart of the Din Tai Fung kitchen. In this role, you prepare, assemble, fold, and steam the dumplings that our guests know and love. Working in our show kitchen, you’ll help showcase the star of our menu while playing a key role on the kitchen team and in the overall guest experience.

• Prepare dumplings from start to finish, including measuring and cutting dough, rolling skins, stuffing, sealing, arranging, and steaming dumplings.
• Ensure proper meat and allergen identifiers are added.
• Maintain a clean and organized dumpling room, label items according to procedures and regulations.
• Participate in monthly staff and dumpling meetings as part of your development.

Your journey at Din Tai Fung will begin as a Dumpling Trainee. Our hands-on dumpling training program provides the skills and knowledge needed to ensure success. Upon completion, graduates transition into the Dumpling Prep role. Details are shared during the interview process.

• Keeps all kitchen areas clean and sanitized
• Organizes items within walk-in coolers and freezers
• Lifts/moves boxes, bags, chairs, and tables (up to 50 pounds)
• Assists with regular deep cleaning of the kitchen
• Maintains confidentiality regarding all proprietary information, including SOPs

• Dumpling experience is not required
• Experience in prep, especially with dough (pastry, pizza, etc.) is a plus
