Position Overview
The Expo / Food Runner is responsible for ensuring food leaves the kitchen quickly, accurately, and with the presentation standards expected by the restaurant. This role acts as a key connection between the kitchen and front-of-house teams.
The Expo / Food Runner must have strong knowledge of the menu, table numbers, seat positions, allergies, modifications, and proper food presentation.
Key Responsibilities Expo Responsibilities
- Organize and coordinate completed dishes at the kitchen pass.
- Confirm every dish matches the guest's order before leaving the kitchen.
- Check presentation, garnishes, sides, sauces, and modifications.
- Verify allergy and dietary requests before food leaves the kitchen.
- Coordinate timing so courses for each table are delivered together whenever possible.
- Communicate missing, delayed, or incorrect dishes immediately to the kitchen and service team.
- Maintain constant communication with servers, managers, chefs, and food runners.
- Keep the pass clean, organized, and ready for service.
- Prioritize food appropriately during high-volume periods.
- Never allow food to sit unnecessarily in the window.
Food Runner Responsibilities
- Deliver food to the correct table and seat position quickly and professionally.
- Announce each dish clearly when placing it in front of the guest.
- Know all menu items and be able to identify dishes without asking the guest, “Who ordered this?”
- Follow proper seat numbers and table numbers.
- Handle plates, serving ware, and food safely and professionally.
- Ensure guests have necessary cutlery, share plates, condiments, and accompaniments.
- Communicate guest requests or issues immediately to the appropriate server or manager.
- Assist with clearing and resetting tables when required.
- Help maintain cleanliness and organization throughout the dining room and service areas.
- Support servers and other team members during busy periods.
Menu & Allergy Knowledge
Expo / Food Runners are expected to:
- Know every dish on the menu by appearance and name.
- Understand major ingredients and common allergens.
- Know which dishes are vegetarian, vegan, gluten-free, or can be modified.
- Understand all modifications and special instructions shown on tickets.
