Job Summary

The Back of House (BOH) Lead – Red Rock Grill is responsible for overseeing the day‑to‑day kitchen operations, ensuring the smooth execution of culinary activities and maintaining high standards of quality, safety, and cleanliness. The BOH Lead reports directly to the Kitchen Supervisor and works closely with the Executive Chef to align kitchen operations with overall food service goals.

Essential Duties and Responsibilities
  • Lead and supervise BOH staff, including line cooks, prep cooks, and dishwashers, ensuring adherence to food safety, quality, and presentation standards.
  • Assist in the training of new kitchen staff, guiding them on cooking techniques, kitchen safety, and operational efficiency.
  • Ensure all BOH team members maintain a clean, safe, and organized work environment, adhering to safety protocols.
  • Assign daily tasks and monitor progress to ensure timely completion of prep work, cooking, and cleaning.
  • Ensure all kitchen stations are set up and properly stocked, coordinating with the Kitchen Supervisor to address any supply needs.
  • Oversee food preparation, ensuring dishes are cooked to recipe specifications and presented consistently.
  • Maintain portion control and quality consistency across all menu items.
  • Communicate regularly with the Kitchen Supervisor to ensure smooth operations and resolve any issues that arise during service.
  • Enforce compliance with health and safety regulations, ensuring BOH staff follow proper food handling, storage, and cleaning protocols.
  • Conduct regular inspections to maintain kitchen cleanliness, sanitation, and equipment functionality.
  • Ensure that food is stored, prepared, and served following food safety guidelines.
  • Report equipment issues or maintenance needs to the Kitchen Supervisor.
  • Assist the Kitchen Supervisor in managing inventory levels for ingredients, supplies, and equipment.
  • Monitor stock levels and ensure all stations are adequately supplied for service.
  • Help reduce food waste through proper portioning and efficient use of ingredients.
  • Support the Kitchen Supervisor in placing supply orders and managing vendor relations as needed.
  • Communicate effectively with the Kitchen Supervisor and Executive Chef to ensure clear execution of menu items and address operational challenges.
  • Foster strong collaboration between the front and back of the house to ensure smooth service.
  • Serve as an ambassador of Destination Zion Lodge, modeling and sharing the Zion “culture” with guests and employees.
  • Maintain a professional image and consistently exceed guest expectations.
  • Work a schedule that may include Saturdays, Sundays, and holidays.

Required Knowledge, Skills, and Experience
  • Must be over 18 years old.
  • Previous supervisory or lead experience in a kitchen or culinary setting.
  • Strong knowledge of food preparation, safety, and sanitation standards.
  • Leadership skills with the ability to manage, train, and motivate kitchen staff.
  • Excellent organizational and multitasking skills, able to work in a fast‑paced environment.
  • Familiarity with kitchen equipment, food safety guidelines, and inventory management.
  • Ability to collaborate effectively with front‑of‑house staff to ensure smooth service.
  • Flexible schedule with availability for evenings, weekends, and holidays.

Understand and follow all ESQ procedures related to job duties. Practice a safety‑first attitude, minimize environmental impact, and treat customers, co‑workers, and leadership with respect. Maintain a neat, clean, and well‑groomed appearance, use and care for assigned PPE, and report any defective or improperly fitted equipment to the Manager.
