Position: Amenity Artist – Cook 1, Full Time

The Amenity Artist – Cook 1 is responsible for the creation and execution of high-quality, visually stunning amenities, specialty cakes, and chocolate showpieces that reflect the luxury standards of the hotel. This role requires exceptional artistic creativity, technical pastry expertise, and the ability to work independently while meeting tight deadlines in a fast‑paced environment.

What you will be doing:

  • Review the daily BEO with the CDP or Sous Chef and prepare the necessary food items in accordance with Fairmont standards in a timely and efficient manner
  • Ensure that all food products are handled, stored, prepared and served safely in accordance with hotel and Food Safety guidelines. Ensure that all ECOSURE standards and processes are completed on a daily basis, this includes but isn’t limited to filling out daily temperature logs, labelling and dating of items as well ensuring food storage areas are cleaned daily.
  • Create and design bespoke amenities, showpieces, and specialty desserts that align with the hotel’s brand and guest expectations.
  • Produce and decorate specialty cakes, petit fours, and plated desserts with precision and artistic flair.
  • Execute advanced chocolate work, including molding, sculpting, and tempering.
  • Apply sugar work techniques for artistic decorations (pulled, blown, or cast sugar); experience is considered an asset.
  • Collaborate with the Pastry team to develop innovative concepts for events, VIP amenities, and seasonal displays.
  • Ensure consistent quality, portion control, and presentation standards are maintained at all times.
  • Work independently and efficiently to manage multiple tasks and deadlines.
  • Maintain cleanliness, organization, and compliance with food safety and sanitation standards.
  • Support overall kitchen operations as needed, including mise en place and inventory control.

Qualifications

Your experience and skills include:

  • Creative and passionate about food and customer service
  • Able to work in a high‑pressure environment
  • Minimum 5 years high end pastry experience.
  • Strong chocolate work skills, with proven experience in showpiece creation and tempering techniques.
  • Working knowledge of specialty cake design and construction (stacked, sculpted, or themed cakes).
  • Working knowledge of sugar work (pulled, blown, or cast) is an asset.
  • Ability to work independently
  • Demonstrated artistic creativity and the ability to think outside the box to produce unique and visually appealing creations.
  • Strong time management and organizational skills with the ability to work independently.
  • Excellent attention to detail and commitment to high standards of quality.
  • Must be Food Safe Certified
  • Must be available to work a variety of shifts including evenings, weekends and holidays
  • Previous experience in a luxury hotel environment is an asset
  • Career minded with strong personal initiative and a desire to achieve the department’s vision and goal
