Position Summary
The Meat Manager oversees all daily operations of the Meat Department, including production, merchandising, inventory management, food safety compliance, team supervision, and customer service. This position ensures department profitability, product quality, regulatory compliance, and adherence to company policies and procedures.
This is an at-will position.

Essential Duties And ResponsibilitiesReasonable accommodations may be made to enable individuals with disabilities to perform the essential functions.
Department Operations & Leadership- Supervise, train, coach, and schedule department associates.
- Plan and execute daily production based on sales forecasts and company standards.
- Oversee ordering, receiving, inspecting, and storing meat and seafood products.
- Monitor inventory levels, control shrink, and participate in periodic physical inventories.
- Ensure accurate pricing, weighing, labeling, and product rotation (FIFO).
- Maintain proper staffing levels to meet operational needs.
- Cut, trim, bone, grind, portion, and prepare meat and seafood products according to company and food safety standards.
- Prepare value-added products and fulfill custom/special orders.
- Operate meat department equipment including band saws, grinders, slicers, knives, and scales safely and in compliance with safety standards.
- Ensure compliance with all applicable federal, state, and local regulations including USDA, FDA, California Department of Public Health, Cal/OSHA, and weights and measures requirements.
- Maintain sanitation standards for cases, prep areas, coolers, and storage areas.
- Enforce proper use of personal protective equipment (PPE), including mesh gloves when using knives.
- Maintain required logs (temperature, cleaning, receiving, traceability, etc.).
- Provide prompt, courteous, and knowledgeable customer service.
- Resolve customer concerns in a professional manner.
- Maintain attractive, full, and properly signed displays to maximize sales.
- Monitor product quality and remove unsellable or out-of-code merchandise.
- Monitor department sales, gross margin, labor expenses, and shrink.
- Implement action plans to meet financial and operational goals.
- Ensure compliance with company policies and procedures.
- Perform additional duties as assigned.

- High school diploma or equivalent.
- Minimum 2 years of meat cutting experience.
- Minimum 2 years of grocery retail experience; supervisory experience preferred.
- Knowledge of meat fabrication, yields, and retail merchandising.
- Working knowledge of food safety regulations and sanitation practices.
- Strong leadership, communication, and organizational skills.
- Ability to work in a fast-paced environment.
- Must be at least 18 years of age.
- Frequent standing and walking (up to 8 hours per shift).
- Frequent use of hands for grasping, cutting, fine manipulation, pushing, and pulling.
- Frequent bending, twisting, squatting, and reaching.
- Ability to lift and carry up to 50 pounds regularly.
- Ability to work in refrigerated environments (32–40°F), freezer conditions (below 32°F), and occasionally warm areas (>90°F).
- Exposure to wet floors and FDA-approved cleaning chemicals.
- Ability to safely operate knives, saws, grinders, pallet jacks (manual/electric), forklifts (if certified), hand trucks, carts, and other department equipment.
Must be available to work flexible schedules including mornings, evenings, weekends, and holidays, based on business needs.
