Job DescriptionThe Floating Culinary Support Specialist reports to the Regional Culinary Director and the Vice President of Operations as an exempt position with an annual salary range of $70,000 – $72,000.
Job OverviewThe Culinary Support Specialist assists with planning, organizing, and delivering high‑quality meal programs. Duties include preparing and serving nutritious meals, managing inventory, traveling to communities as needed, and ensuring compliance with all standards.
Responsibilities and Duties- Inspect food and food preparation to maintain quality standards and sanitation regulations.
- Ensure availability of current diet manuals for all dining and nursing staff.
- Remain on‑site during meal preparation or act as the designee.
- Prepare and present three meals a day, ensuring snacks and beverages are available at all times.
- Serve special diets in accordance with physicians’ orders.
- Maintain the interval between the evening meal and next breakfast to no more than 15 hours.
- Prepare and serve quality meals.
- Prepare texture‑modified foods and meet special dietary needs.
- Maintain accurate food safety records and log temperatures for hot, cold, refrigerator, and freezer areas.
- Ensure compliance with HACCP, labeling, and storage protocols.
- Ensure compliance with all federal, state, and local regulations and community policies.
- Verify sufficient food on hand for emergency three‑day service.
- Ensure equivalent nutritional substitute foods are available.
- Prevent contamination by ensuring proper storage and handling.
- Serve meals at the proper temperature and presentation, with appropriate condiments.
- Cover for absent staff and collaborate with Health, Recreation, and Community Relations directors as needed.
- Oversee the coffee, tea, and snack table in the tearoom.
- Estimate food and beverage costs and order supplies.
- Maintain confidentiality of resident information.
- Perform other duties as assigned.
Mandatory:
- Current Serv Safe certification or ability to obtain within a reasonable timeframe.
- Minimum 3 years of food‑service experience, including full-line menu preparation, special diets, and 1 year of supervisory experience.
Preferred:
- Culinary training or equivalent experience.
- Certifications in food handling or safe‑serve at least every five years.
- Proficiency in reading, writing, and presenting professional communication.
- Mathematical proficiency for calculating costs and proportions.
- Problem‑solving ability in varied situations.
- Physical ability to perform kitchen rounds, handle tools, and lift up to 50 lbs.
- CPR and First Aid certification.
