Direct food ordering, preparation, production, and control for all food outlets and banquet facilities of the hotel;
Oversee hiring, training, and development of department personnel and exercise hire/fire discretion within hotel policy;
Maintain quality of food product and ensure consistency in food delivery and standards;
Manage profit and loss and major operating expenses; set margins and monitor against projections;
