The Pastry Sous Chef is responsible for overseeing a team producing everything from mousses, cookies, quick breads, layered cakes, ice creams, viennoiserie to passed, plated and buffet styled desserts to chocolate work in a high-volume kitchen. This individual will assist in menu development, recipe testing, and working alongside the pastry team in daily production. This individual is expected to develop an understanding of ordering and inventory procedures and must have a good sense of food and labor cost, as they directly affect monthly and yearly revenue.
The Pastry Sous Chef will assist in overseeing the overall running of the kitchen and maintaining cleanliness as per Company's health and safety standards. This individual must foster team spirit to create comradery for a strong, positive, and supportive working environment. The Pastry Sous Chef will assume all responsibilities in the absence of the Executive Pastry Chef. This individual must have flexibility in scheduling.

+ Minimum 3 years of Pastry experience in large scale format baking, commissary, catering or hotel preferred
