Sushi Cook Position

As a Sushi Cook, you'll prepare and assemble fresh sushi products in our shared production facility. You'll work with both automated and manual sushi-making equipment to help deliver consistent, high-quality products every day.
Responsibilities include:
- Preparing sushi rice, seafood, and vegetables following Hissho's standardized recipes.
- Ensuring all required logbooks, including rice pH log and temperature logs, are maintained and verified.
- Rolling and cutting sushi using Suzumo automated machines.
- Following batch sheets and production targets for accuracy and efficiency.
- Packaging and labeling finished trays using BOHA terminals.
- Maintaining strict food safety and sanitation standards (HACCP/GMP).
- Assisting with daily setup, cleaning, and equipment sanitation.
- Supporting continuous improvement and process consistency across the team.
Requirements:
- Serv Safe certification, or willingness to obtain. Required.
- Restaurant, food production, or sushi-making experience preferred.
- Basic understanding of food safety, sanitation, and proper handwashing procedures.
- Comfortable working evenings, weekends, or assigned production shifts.
- Able to lift up to 25 lbs and stand for long periods.
- Ability to effectively communicate with team members and supervisors.
- Ability to follow recipes, portioning guides, and standard operating procedures.
- Strong attention to detail when preparing, rolling, cutting, labeling, and packing products.
- Ability to maintain consistent product quality and presentation.
- Willingness to learn how to use sushi rolling, cutting, and rice production equipment.
- Ability to follow daily production schedules and meet required order deadlines.
- Willingness to rotate between prep, sushi production, packaging, labeling, and sanitation duties.
