• Manage the day‑to‑day kitchen operation, preparation and service of all food.
• Maintain the highest standards of quality and food hygiene controls.
• Run the kitchen in the absence of the Executive Head Chef.
• Manage efficient stock control and procedures.
• Ensure financial aspects of kitchen management are adhered to and costings fall within budgeted guidelines.
• Communicate within the kitchen and with other departments.
• Control food wastage.
• Maintain the highest levels of food hygiene, health and safety.
• Support and monitor training and development of the kitchen team.
