Summary: Dining Hall lead assists Head Cook in coordination of food preparation and helps cook buffet style meals for employees/crew/customers by performing the following duties:

Note:

Dining Hall Lead II residing in Trident housing will be subject to a co‑pay of fifteen dollars per day for room and board, for each day that at least 8 hours of work is offered.

Key Responsibilities
  • Responsible for food preparation under the guidance of Head Cook.
  • Must demonstrate the ability to be flexible and to learn the different roles in the galley under the supervision of the Cook (Head Cook).
  • Food prep, cleaning, dishwashing, baking, restocking, inventory counts.
  • Performs routine deep cleaning of cooking area.
  • Washes dishes and cookware, cleans tables and floors, empties trash.
  • Maintains a clean working environment.
Additional Responsibilities
  • Performs other similar or related duties as requested or assigned.
  • Acquire knowledge of Trident's Environmental and Safety Policies by completing required training programs and performing designated work activities in accordance with training and procedures/work instructions.
  • Notify designated personnel of any environmental and safety incidents, or risks not previously documented, in accordance with Environmental Awareness and or Safety training.

Minimum Requirements

Minimum Qualifications
  • Must be a current Trident Seafoods employee or have worked for Trident Seafoods before.
  • Food Handler's card; required within 30 days of employment.
  • Has worked in a Lead position at a Trident location for a minimum of 2‑3 years.
Preferred Qualifications
  • One year certificate from college or technical school; or three to six months related experience and/or training; or equivalent combination of education and experience.
  • Previous experience food service industry preferred.
  • HS Diploma or equivalent (or degree, etc.).
Physical Demands

While performing the duties of this job, the employee is regularly required to stand; walk; use hands to finger, handle, or feel and reach with hands and arms.

The employee is frequently required to climb or balance.

The employee is occasionally required to sit; stoop, kneel, crouch, or crawl and talk or hear.

The employee moves objects regularly up to 10 pounds and frequently up to 25 pounds.

Work Environment

This position works in the kitchen where food is prepared and served. This role is subject to standing for long periods of time and must be able to work under pressure in a fast‑paced environment. The noise level in the work environment can be moderately loud.

Kitchens are usually crowded and filled with potential dangers, such as hot ovens or slippery floors. Kitchen staff must reduce risk by proper PPE. Gloves, long‑sleeve shirts, aprons, and non‑slip shoes to reduce the hazards of slips, falls, cuts, and burns.
