Four Seasons Hotel George V Paris is looking for an experienced and qualified Supervisor Technical Chef (H/F). The candidate must have a work authorization that complies with French legislation. A fluent level of French and English is required. Position based in Paris.
The Supervisor Technical Chef is in charge of all kitchens and the equipment that constitutes them. He/she supervises and coordinates the technical team in all tasks related to the kitchens, while ensuring the proper functioning and safety of the facilities.
He/she assists technicians in solving the problems they may encounter and must be able to propose adapted solutions in all situations, ensuring efficiency and quality.
The Supervisor works under the hierarchical responsibility of the management of his/her service: the Technical Assistant, the Technical Assistant Director, and the Head of Department.
The ideal candidate must be qualified and experienced in organization and priority management. He/she must demonstrate excellent team spirit, impeccable presentation, and strong interpersonal skills to effectively lead and motivate his/her team.
Essential Functions:
- Manage external contractors for operations related to heating, cooling, cleaning of hoods, cleaning, pumping of grease trap, and air conditioning.
- Perform weekly technical inspections and ensure follow-up of corrective actions.
- Ensure the sanitary follow-up of the kitchens in collaboration with the hotel's Health Manager through technical supervision.
- Track and inventory the equipment and consumables of all kitchens.
- Clean and keep clean and tidy all technical premises related to the kitchens.
- Respond quickly to any complaints or requests from the kitchens, and manage priorities according to the needs of the operation.
- Ensure the repair and maintenance of kitchen equipment (cold rooms, cold stamps, small and large household appliances).
- Assist with kitchen work if necessary and adapt schedules according to planned services.
- Work occasionally on weekends, public holidays, and nights according to the needs of the operation.
- Return the building to service during a safety shutdown (rearm gas).
- Intervene on all kitchen equipment and identify breakdowns on the cold room compressor, switch to lost water in case of frozen water supply interruption.
- Identify the different kitchen starts on the TGBT.
- Face any emergency situation, such as fire, power outages, or any other technical incident.
- Maintain good relations with other employees, educate and encourage staff when needed.
- Organize, clean, and manage the premises assigned to him/her, and report supply needs to the Management.
- Respect safety and quality standards, use PPE correctly, and take all precautions when handling tools, chemicals, ladders, and risky equipment.
- Report any incident, even minor, to his/her superior or to safety if necessary.
- Perform any additional task or project assigned by the Management.
- Provide a daily report to management.
- Establish the weekly forecast schedule for the technical team.
Secondary Functions:
- Follow the procedures related to time tracking and uniforms.
- Provide any help within the service or more globally in the hotel if needed, on request from the management.
- Be versatile and flexible according to circumstances either within his/her service or to help any other service in the hotel.
- Guide clients within the hotel or inform them about the hours of all the hotel's sales points.
