JOB SUMMARY

The Cheese Formulation Specialist will be responsible for evaluating the incoming natural cheese raw material results and adjusting our internal formula to achieve consistent finished product results. The Cheese Formulation Specialist coordinates between the Lead Cheese Makers to ensure the cheese results are consistent and meet all quality assurance standards. The Cheese Formulation Specialist may make formula adjustments based on computer formulation results and will need to monitor those formula adjustments and keep records for review.

This role requires a strong understanding of dairy science, food chemistry, and manufacturing processes.

DUTIES & RESPONSIBILITIES
  • Evaluate cheese characteristics including flavor, body, texture, aroma, color, and appearance.
  • Document and record all grading results accurately for traceability and quality control purposes.
  • Monitor finished products during and throughout shelf life.
  • Work closely with R&D, production, packaging, and QA teams to maintain consistent product quality.
  • Provide feedback to the production team on trends or recurring quality issues including customer and consumer feedback.
  • Investigates root cause and trending issues for customer and consumer complaints for cheese concerns (i.e. meltability, texture, etc.). Provides corrective actions for the operations team to ensure continued positive consumer experience.
  • Assist in training new team members on sensory and quality standards.
  • Other duties may be assigned.
WORK ENVIRONMENT
  • Varied temperature environments. Refrigerated (34-36 degrees);
    Ambient (60-80 degrees)
  • Protective gear such as gloves, work boots, and smocks always required.
  • Will work around moving machinery and walk on wet floors.
  • Moderate physical effort required.
  • Regularly required to walk, reach, bend and lift throughout the day. Standing 8hrs or more.
  • Must be able to 50lbs.
  • Ability to work flexible shifts including nights or weekends as needed
JOB QUALIFICATIONS
  • Strong sensory evaluation skills (taste, smell, touch, sight).
  • Ability to work in cold storage environments and handle physical tasks (lifting cheese wheels/blocks up to 50 lbs.).
  • Attention to detail and strong observational and record-keeping skills.
EDUCATION & EXPERIENCE
  • College degree and/or technical training in dairy, food science, or related field preferred.
  • 5+ years of experience in cheese grading, quality control, or cheese production
