The Assistant Outlet Manager - Food & Beverage supports the efficient operation of hotel F&B outlets by ensuring exceptional guest service, effective team management, and achievement of financial and operational targets in line with voco Hotel standards.
- Effectively manage the outlet to ensure smooth day-to-day operations in line with approved standards and procedures.
- Oversee the implementation and compliance of all departmental standards as outlined in the Standards & Procedures Manual.
- Ensure strict adherence to outlet opening and closing procedures.
- Ensure compliance with established billing, cash handling, and payment procedures.
- Conduct effective shift briefings to ensure team awareness of VIP guests, special occasions, daily promotions, and upselling priorities.
- Maintain a visible presence on the floor, personally welcoming and fare welling guests to enhance guest satisfaction.
- Motivate, engage, and lead team members to consistently deliver optimum service across all shifts.
- Take a hands‑on leadership approach in all operational aspects of the outlet.
- Ensure achievement of monthly budgeted and forecasted food and beverage revenues, costs, and expense targets.
- Strictly adhere to the approved operating budget and implement effective cost control measures.
- Participate in the preparation of the Annual Operating Budget, including projected revenues, expenses, operating equipment, and FF&E requirements, in alignment with the Annual Business Plan.
- Manage the outlet as a standalone profit center, assuming accountability for revenue generation and cost management
- Ensure the outlet is managed efficiently and consistently in accordance with the established concept and brand positioning.
- Ensure all Standard Operating Procedures (SOPs) and service standards are consistently implemented to achieve the service levels outlined in the Departmental Operations Manual.
- Ensure proper handling and management of table reservations to maximize seating efficiency and outlet turnover.
- Ensure guest history and preference data are accurately maintained and updated.
- Assign duties and responsibilities to team members and regularly monitor performance to ensure standards are met.
- Provide ongoing guidance, feedback, and coaching to support team development and service excellence.
- Establish, monitor, and strictly adhere to approved par stock levels for all operating equipment and supplies.
- Ensure the outlet is fully equipped at all times to support operational requirements.
- Conduct monthly inventory checks for all operating equipment and supplies.
- Control the requisitioning, storage, and appropriate usage of all operating equipment and supplies to minimize loss and damage.
- Understand and strictly adhere to the Rules & Regulations established in the Employees’ Code of Ethics and the Hotel’s policy on Fire, Hygiene, Health, and Safety.
- Promote efficiency, confidence, courtesy, and an extremely high standard of social skills.
- Generally, promote and ensure good inter‑departmental relations.
- Display a pleasant manner and positive attitude at all times and promote a good company image to guests and colleagues.
