Enjoy the sunshine welcome of Italy at a family run Culinary cooking school in Sorrento. Discover the healthy secrets of Italian cuisine with chef Biagio and his use of fresh grown ingredients for creating the simple local Mediterranean dishes. Our way of cooking has evolved over the centuries. The south of Italy has always been a Mediterranean base through which many civilizations have passed, giving to our land and likewise to our plates a touch of their traditions. Our mission is to teach our students the art of traditional southern Italian cooking, specifically those dishes rooted in our culture and way of life. In this way we not only offer cooking classes, but a piece of our historical heritage.
Cooking classes begin in the late morning or afternoon to cook a different full 4 course meal every day, which is then served for lunch or dinner at Mami Camilla. The chef, provides each student with a book of recipes so that you could follow each day's menu and take notes and ask any questions that you may have. We always give the students the opportunity to have hands on experiences with every dish we make, that's why we limit our class size to no more than 5/6 students.
The school was estabished in 1998 and is located in the old part of Florence. There are classrooms for drawing and designing both by hand and by computer, and a large. fully-equipped workshops with individual professional workbenches, and the instruments and tools needed for the various specialisations as well as machinery for complete cycle casting.
Courses are available for a minimum of one month and a maximum of a year and are aimed at those are newcomers to the craft and also those who already have some basic knowledge and wish to gain specialisation.The wide variety of classes with different duration are designed to adapt to the skills, capacities, demands and objectives of each individual student.
The beginners have to follow a precise programme constructing simple pieces in order to learn how to work with metal, laminating, wiredrawing, soldering etc.
When the student is able to manage the main techniques, creativity can be used in constructing more complexe pieces: the various components and their combination, uniting the parts (soldering or mechanical jointing). Our jewellery making course includes some of the traditional tecniques as engraving, stone setting and fretwork.
All students are together in the same laboratory but everyone works at his/her own level on different objects.
Everyone's programme is tailored to their own experience. Lessons are morning and afternoon every day from Monday to Friday. Lessons are held in Italian but we have a teaching assistant who can help students when they do not understand.
